Leftover Potato Cakes Version 1 Categories: vegetables, cyberealm, kooknet, breakfast ----SHAPE INTO LITTLE CAKES---- 1 leftover mashed potatoes ----ADD---- 1 egg, beaten 1 parsley, chopped 1 celery, chopped 1 celery seed 1/4 cup chopped sauteed onions or raw onion; , grated 1 pinch nutmeg, grated ----DIP THE CAKES IN---- 1 flour, bread crumbs, or crushed cor; nflakes ----MELT IN A SKILLET---- 1 butter or fat Brown the cakes in the butter on one side, reverse them and brown the other side. Yield: 4 servings |
