Kathryn Palmer's Maple Bars Categories: cookies, desserts 3/4 cup sugar 1/2 cup vegetable shortening 1 cup maple syrup 1 teaspoon vanilla extract 2 eggs 2 cup regular rolled oats 1 cup all purpose flour 1/4 cup flaked sweetened coconut 1 teaspoon baking powder 1/2 teaspoon salt 1 vegetable cooking spray Cream sugar and shortening at medium speed of mixer until light and fluffy (about 5 minutes). Add syrup, vanilla, and eggs; beat until well blended. Combine oats and next 4 ingredients; stir well. Add to creamed mixture, stirring just until dry ingredients are moistened. Pour batter into a 13x9 inch baking pan coated with cooking spray. Bake at 350 deg for 40 minutes or until a wooden pick inserted in center comes out clean. Yield: 2 dozen Yield: 2 dozen |
