"Southwestern" Frittata - (Egg, Cheese And Bell Pepper Omele Categories: low fat, breakfast, brunch, omelets 6 egg whites 1/2 cup diced green or red pepper 4 mushrooms; diced 1/2 cup salsa 1/2 cup shredded Cheddar cheese Spray heavy skillet with cooking spray. Place over medium heat and saute vegetables until tender. Combine salsa and egg whites. Pour into skillet; cook until partially set. Do not attempt to blend mixture. Sprinkle with cheese. Place skillet under broiler and cook several minutes until cheese is melted and eggs are set. Serve from the pan with extra salsa or diced peppers. This recipe yields 2 servings.
