Broiled Salmon With Cucumbers

1 cup diced onions
1/2 cup vinegar
4 garlic cloves; minced
2 teaspoons minced peeled gingerroot
1 teaspoon low-sodium soy sauce
2 cucumbers; thinly sliced
1 1/2 pounds salmon fillets
1 tablespoon olive oil
4 cups hot cooked rice

In a large nonstick frying pan over medium-high heat, combine the onions, vinegar, garlic, ginger and soy sauce. Bring to a boil, stir and cook for 3 minutes. Remove from heat. Add the cucumbers. Set aside to cool. Rub the salmon on both sides with the oil. Broil about 6 inches from the heat for 4 to 5 minutes per side, or until cooked through. Serve on a bed of rice topped with the cucumbers. This recipe yields 4 servings. Nutritional Information Per Serving: Calories: 145; Fat: 3.8 grams (24% of calories); Cholesterol: 24 milligrams; Sodium: 34 milligrams; Fiber (grams) 1.1.
