Brown Rice Pilaf With Asparagus And Mushrooms Categories: vegetables, low fat, side dish, rice 1 tablespoon margarine 1 small onion; chopped 1/2 pound fresh mushrooms; thinly sliced 1 cup brown rice 3 cups water 1 chicken-flavored bouillon cube 1/2 pound asparagus 1/8 teaspoon nutmeg 2 tablespoons finely-grated Swiss cheese 1/2 cup chopped parsley; for garnish In a saucepan heat the margarine and saute the onions and mushrooms over medium heat until softened. Add the rice and stir. Add the water, bouillon cube and nutmeg. Bring mixture to a boil, reduce heat, cover and simmer for 35 minutes. Cut asparagus into 1-inch pieces (discard woody stems). Stir asparagus into the rice mixture, cover, and cook another 5 minutes. Stir in the grated cheese and garnish generously with parsley. This recipe yields 6 servings.
