Hearty And Healthy Chicken Fajitas Categories: main dish, poultry, low fat, chicken 1 pound boneless skinless chicken breast; cut 1" strips 3 tablespoon lime juice 1/2 teaspoon chili powder 1/2 teaspoon ground coriander 1 onion; quartered 1 green pepper; sliced into strips 8 flour tortillas - (6" dia) Chunky salsa Combine lime juice, chili powder and coriander and pour over chicken breast. Refrigerate for 30 minutes. Add vegetables to chicken and toss well. Coat a pan with non-stick cooking spray. Add chicken and vegetables and stir-fry until done. Warm tortillas in microwave for 20 seconds. Fill with chicken mixture. Serve warm with salsa. This recipe yields 4 servings.
