Jam-Filled French Toast Categories: low fat, breakfast 1/4 cup fat-free cream cheese; softened 1 tablespoon powdered sugar 1/2 teaspoon grated orange peel 8 slices French bread 1/2" thick 8 teaspoons fruit spread Egg substitute equivalent to 4 eggs 1/2 cup skim milk 1/2 teaspoon vanilla 8 teaspoons fruit spread Non-stick spray Combine fat-free cream cheese, powdered sugar and orange peel. Spread evenly on 4 slices of French bread. On each of the remaining slices, spread 2 teaspoons of fruit spread. Make a "sandwich" from the bread topped with the cream cheese mixture and the ones topped with the fruit spread. Combine egg substitute, skim milk and vanilla. Lightly spray a skillet with non-stick spray -- heat until hot. Dip sandwiches into egg mixture (coat both sides). Cook in skillet until golden brown. Top with 2 teaspoons fruit spread and serve. This recipe yields 4 servings.
