Lemon Bars Categories: cookies, desserts, low fat === CRUST === 1 1/2 cups crushed vanilla wafers - (abt 35) 4 tablespoons reduced-fat margarine; melted === TOPPING === Egg substitute equal to 3 eggs 1 cup sugar 4 tablespoons flour 2 tablespoons lemon juice Grated rind of 1/2 lemon 4 ounces reduced-fat cream cheese 2 tablespoons powdered sugar Preheat oven to 350 degrees. Spray a 10- by 14-inch pan with non-stick spray. Combine wafer crumbs and melted margarine. Mix well and press into the bottom of the pan. In a large bowl, mix the sugar and the flour. Add the egg substitute, lemon juice, lemon rind and reduced-fat cream cheese. Mix well. Carefully pour the mixture over the wafer crumbs -- spread evenly. Bake for 20 to 25 minutes. Remove from oven and cool. Refrigerate until served. This recipe yields 30 bars.
