Lemon Chicken With Noodles Categories: main dish, poultry, low fat, chicken 8 ounces medium no-yolk egg noodles 1 tablespoon lemon juice 4 boneless skinless chicken breast ha; (abt 1 lb total) 1 teaspoon freshly-ground black pepper 1 tablespoon olive oil Cook the noodles in a large pot of boiling water for 8 minutes, or until just tender. Drain and keep warm. Place the chicken between sheets of wax paper and pound lightly with a mallet to an even thickness. In a shallow container, mix the oil, lemon juice, paprika and pepper. Dip the chicken in the mixture until coated. Heat a no-stick frying pan over medium-high heat. Add the chicken. Cover and cook 8 to 10 minutes, or until the chicken is opaque. Serve over the noodles.
