Citrus Ambrosia Categories: low fat, side dish 1 pineapple; peeled, cored, and cut into bite-size chunks 2 navel oranges; sectioned, chopped 2 tangerines; sectioned, chopped 1 ruby red grapefruit; sectioned, chopped 1/3 cup unsweetened shredded coconut 1 teaspoon grated orange peel In a large bowl, combine the pineapple, oranges, tangerines and grapefruit. Toss lightly. Add the coconut and orange peel. Mix well. Cover and refrigerate for at least 30 minutes. This recipe yields 10 servings. Comments: This makes a refreshing conclusion to a hearty meal. It's also good as part of a brunch or luncheon menu. High in vitamin C, this is a good dish to serve in the winter months when oranges, tangerines and grapefruit are plentiful. If mangoes are available, add some peeled cubes -- they'll make the ambrosia sweeter and more dessert-like.
