Parmesan Zucchini Categories: vegetables, low fat, side dish 2 medium zucchini; sliced diagonally about 1/4" thick 1 medium onion; thinly sliced 2 tablespoon olive oil Salt; to taste Freshly-ground black pepper; to taste 3 tablespoon freshly-grated Parmesan cheese Preheat oven to 375 degrees. Layer the zucchini and onion slices in a 9- by 13-inch glass or ceramic baking dish. Pour approximately 2 tablespoon water over the zucchini, drizzle the olive oil over the vegetables and season lightly with salt and pepper. Sprinkle the Parmesan cheese on top. Bake on the top shelf of the oven for 25 to 30 minutes, until the zucchini is tender and the top is browned. Serve hot or at room temperature. This recipe yields 4 servings.
