Pasta With Grilled Chicken, White Beans And Mushrooms

2 chicken breasts
1 tablespoon olive oil
1/2 onion; chopped
8 ounces sliced mushrooms
1 cup white beans; cooked
2 tablespoons chopped garlic
1/4 cup chopped fresh basil
1/4 cup grated Parmesan cheese
Freshly-ground black pepper; to taste
12 ounces pasta (elbow or rotelle or shells)

Grill or broil the chicken breasts and shred into small pieces. In a large pan, sauté the onion and mushrooms in the olive oil. Add white beans, garlic and fresh basil. Add the chicken and keep warm. Cook the pasta in water until al denté. Drain and add to the chicken mixture. Toss well. Serve immediately topped with Parmesan cheese and pepper to taste. This recipe yields 4 generous servings.
