1 can yellow hominy - (15 oz)
2 cans pinto beans - (15 oz ea)
1 tomato; diced small
1/4 cup onion; diced small
2 garlic cloves; minced
1 fresh serrano pepper; minced (1/2 cup)
2 tablespoons chopped cilantro
1 teaspoon chili powder
1/2 cumin
1/2 cup water

Rinse and drain hominy and beans. In a large saucepan, combine the hominy and beans with the remaining ingredients. Heat through. This recipe yields 8 servings (3/4 cup each). Nutritional Information Per Serving: Calories: 102; Fat: 0.8 grams (7% of calories); Cholesterol: 0 milligrams; Sodium: 422 milligrams; Fiber (grams) 1.8.
