Sunshine Halibut Categories: main dish, low fat, seafood 4 fresh halibut steaks - (4 oz ea); cut 3/4" thick 1/3 cup finely-chopped onions 1 garlic clove; minced 2 tablespoons snipped fresh parsley 1/2 teaspoon finely-shredded orange peel 1/8 teaspoon freshly-ground black pepper 1/4 cup fresh orange juice 1 tablespoon fresh lemon juice Preheat the oven to 400 degrees. Arrange the fish in an 8- by 8- by 2-inch baking dish and set aside. Lightly spray an unheated small skillet with no-stick spray. Add the onions and garlic. Cook and stir over medium heat until the onions are tender. Remove the skillet from the heat. Stir in the parsley, orange peel and pepper. Spread the onion mixture on top of the fish. In a custard cup, stir together the orange and lemon juices. Then pour the juice mixture over the fish. Cover with foil and bake for 10 to 15 minutes or until the fish flakes easily when tested with a fork. This recipe yields 4 servings. Comments: When you serve fresh halibut, make sure its delicate flavor shines through. In this recipe, you can do that by using only freshly squeezed orange and lemon juices.
