Quiche Lorraine Categories: poultry, low fat, brunch, turkey 10 slices white bread; crust removed 3 cups skim milk Egg substitute equal to 6 eggs 3/4 teaspoon dried mustard 2 tablespoons chopped parsley 4 ounces smoked Cheddar or gouda cheese; grated 2 cups diced turkey ham Preheat oven to 325 degrees. Generously spray an 8-inch by 10-inch glass baking dish with nonstick spray. Tear bread into 1-inch pieces and place into the baking dish. In a separate bowl, blend milk, egg substitute, mustard and parsley. Add the grated cheese and diced turkey ham. Mix well. Pour over bread pieces. They will soak up the mixture. Bake for 1 hour or until center is set. This recipe yields 9 servings.
