Quick Breakfast Casserole Categories: low fat, breakfast 4 slices whole wheat bread; cubed 4 ounces turkey ham - (abt 4 slices); sliced thin strips 2 ounces reduced-fat cheddar cheese; shredded 1 cup fat-free egg substitute 2 cups skim milk 1 teaspoon Worcestershire sauce 1 teaspoon powdered mustard 1/2 teaspoon curry powder Coat a 9-inch-square nonstick pan with nonstick cooking spray. Spread the bread cubes over the bottom of the pan. Layer with the turkey ham and cheddar. In a medium bowl, beat the egg substitute, milk, Worcestershire sauce, mustard and curry; pour over the cheese. Cover and refrigerate overnight. Bake, uncovered, at 350 degrees until the eggs are set, about 30 minutes. This recipe yields 4 servings.
