Roasted Potatoes With Garlic And Herbs

1 pound small white or red potatoes - (2" d
10 garlic cloves
1 tablespoon olive oil
1 teaspoon chopped fresh rosemary
2 tablespoons chopped fresh parsley
1/4 teaspoon salt
1/4 teaspoon freshly-ground black pepper
1 teaspoon butter

Preheat oven to 400 degrees. Wash and dry potatoes. In a mixing bowl, toss whole potatoes and garlic cloves with oil, rosemary, salt and pepper. Spray a baking dish with non-stick spray. Arrange potato mixture in baking dish in a single layer. Cover with lid or aluminum foil. Bake for 25 minutes. Remove lid or foil. Turn potatoes and bake uncovered for another 25 minutes or until potatoes are soft and slightly browned. Pour into a serving bowl, mix with butter and serve. This recipe yields 4 servings.
