Popovers Categories: low fat, muffins, breads/rolls 1 cup skim milk 1 cup flour 1/4 teaspoon salt 4 egg whites Preheat oven to 425 degrees. Generously spray six large metal or glass muffin molds with cooking spray. Combine the ingredients and mix until smooth. Preheat muffin mold in oven for two minutes. Pour batter into the preheated cups until two-thirds full. Bake in the top part of the oven for 30 minutes or until golden brown and puffy. Serve immediately. This recipe yields 6 large popovers. Variation: To make "cheesy" popovers, add one tablespoon batter into the bottom of each cup. Add one teaspoon Parmesan cheese on top of batter. Fill cups two-thirds full with remaining batter. One teaspoon Parmesan cheese adds 19 calories, scant fat and cholesterol and 30 mg of sodium.
