Shrimp-Apple Salad Categories: low fat, salads/dressings 48 tiny frozen shrimp - (abt 1 cup); thawed 2 tablespoons chopped red onion 1/4 cup lemon juice 3 apples; cubed 1/2 cup diced celery 1 tablespoon chopped parsley 1 teaspoon dried dill 4 teaspoons horseradish Freshly-ground black pepper; to taste 1/2 cup fat-free mayonnaise 4 tomatoes; cored Saute the shrimp in water to make sure they're thawed. Add red onion. Cool. Core and cube the apples. Toss apples in the lemon juice. Combine the celery, parsley, dill, horseradish and fat-free mayonnaise. Add pepper to taste. Combine the shrimp and onion with the mayonnaise mixture. Add apples. Stuff into cored tomatoes and serve chilled. This recipe yields 4 servings.
