Some-Like-It-Hot Potato Salad Categories: low fat, salads/dressings 2 pounds red potatoes 1/4 cup diced red onion 1/4 cup diced white onion 1 celery rib; sliced 1/2 cup diced bell pepper 1/2 cup nonfat mayonnaise 1/3 cup nonfat sour cream 2 tablespoons Dijon mustard 2 tablespoons minced fresh dill Ground red pepper; to taste 1 tablespoon cider vinegar Freshly-ground black pepper; to taste Boil the potatoes until tender. Set aside. When cool enough to handle, cut into 1-inch cubes. In a large bowl, combine potatoes with remaining ingredients (adding red pepper according to individual taste in hotness), toss gently and chill. This recipe yields 8 servings (3/4 cup each).
