Spicy Chicken Saute Categories: main dish, poultry, low fat, chicken 1 tablespoon chili powder 1 1/4 teaspoon ground cumin 1/8 teaspoon cayenne pepper 4 boneless skinless chicken breasts 1 1/2 teaspoon olive oil 1/2 cup chicken broth 1 tablespoon vinegar 8 ounces canned tomatoes; diced 4 ounces mild or hot green chili peppers; diced 1 lime; cut into wedges Mix the three dry ingredients together. Rub 1 tablespoon of the spice mixture onto the chicken. In a skillet, warm the oil and add the chicken. Saute for 2 to 3 minutes per side. Transfer the chicken to a plate. Add the broth, vinegar and the remaining spice mixture to the skillet and bring to a boil. Boil for 1 to 2 minutes. Return chicken to the skillet. Add the tomatoes, corn and chilies and bring to a simmer. Continue simmering for about 5 minutes, or until the chicken is cooked through. Serve with lime wedges. This recipe yields 4 servings.
