Spicy Low-Fat Dip Categories: appetizers, low fat, dips/spreads 2 cans black beans - (15 oz ea); undrained 2 jalapeņo peppers; chopped (for less heat, remove the seeds) 2 garlic cloves; chopped 1 cup chopped seeded unpeeled tomatoes 1/4 cup chopped red onion 2 tablespoon minced fresh cilantro Juice of one lime Salt; to taste Freshly-ground balck pepper; to taste Drain beans, reserving 1/4 cup of the liquid. Add beans, reserved juice, jalapeņos, garlic, salt and pepper to food processor bowl or blender. Process until smooth. Spoon into a serving bowl. Combine tomato, red onion, cilantro and lime juice; stir well and spoon over bean mixture. Serve with baked tortilla or pita chips. This recipe yields 3 cups.
