Beef Round Steak, Zesty Lime LC-4

1 lb beef top round steak, bnls; ~1in thick
1/2 tsp lime peel; grated
1/3 cup lime juice
1/4 cup tomato juice
1 tbs cilantro, fresh; chopped /parsley
2 tsp vegetable oil
1/4 tsp salt
1/8 tsp red pepper sauce
2 clove garlic; finely chopped

Pierce beef with fork several times on both sides. Mix remaining ingredients in shallow nonmetal dish or heavy-duty resealable plastic bag. Add beef; turn to coat with marinade. Cover dish or seal bag and refrigerate at least 8 hours, but no longer than 24 hours, turning beef occasionally.

Heat coals or gas grill. Remove beef from marinade; discard marinade. Cover and grill beef 4 to 5 inches from medium heat 25 to 30 minutes for medium doneness (160º), turning once. Cut beef across grain into thin slices.
