Eight-Layer Appetizer Spread Categories: appetizers, brunches & entertaining lettuce leaves 3/4 cups vegetarian refried beans 4 ounces diced green chili peppers; drained several dashes bottled hot pepper s 8 ounces light dairy sour cream 1/3 cup salsa 3/4 cups chopped avocado 1/2 cup finely shredded reduced fat montere --or cheddar cheese --2 ounces 1/3 cup sliced green onion 1 cup chopped lettuce 1 small tomato; seeded and chopped --about 1/2 cup 10 ounces light tortilla chips --about 8 cups Partly line a serving plate with lettuce leaves. Stir together refried beans, chili peppers, and hot pepper sauce in a small bowl. Spread bean mixture over the lettuce leaves, making a layer about 1/4 inch thick. Spread sour cream in a layer atop the beans. Spoon a layer of salsa atop the sour cream; swirl salsa into sour cream. Sprinkle with avocado, cheese, green onions, lettuce, and tomato.
