Nacho Snackers Categories: appetizers 1/2 cup shredded low-fat cheddar cheese 1 small pickled jalapeno pepper; chopped 1 medium tomato; chopped 14 melba rounds or toasts 1. In small bowl, combine cheese, jalapeno pepper and tomato. Spoon 1 tablespoon mixture onto each melba round. 2. Place 4 to 6 nachos on microwaveable dish. Microwave on High until heated through, about 45 seconds. Repeat with remaining nachos. (To bake in conventional oven, preheat oven to 400°F. Bake prepared nachos on a cookie sheet until heated through, about 5 minutes.) Makes 14 servings. Preparation time: About 7 minutes. Microwave time: About 45 seconds. Conventional oven time: About 5 minutes. Per serving: About 19 cal, 2 g pro, 3 g car, 0 g fat, 19% cal from fat, 4 mg cholesterol, 97 mg sod, 0 g fiber.
