Bell Pepper Nachos Categories: appetizers, brunches & entertaining, tex-mex 1/2 green bell pepper; seeded and cut into 6 strips 1/2 red bell pepper; seeded and cut into 6 strips 1/2 yellow bell pepper; seeded and cut into 6 strips 1/2 cup salsa 2 tablespoons sliced ripe olives 3 tablespoons shredded part-skim mozzarella cheese Cut bell pepper strips crosswise in half. Place on ungreased broilerproof pie plate, 9 X 1-1/4 inches. Top with salsa, olives and cheese. Set oven control to broil. Broil with top 3 to 4 inches from heat about 3 minutes or until cheese is melted. 6 SERVINGS (6 NACHOS EACH) MICROWAVE DIRECTIONS: Place bell pepper pieces on microwavable plate. Top with salsa, olives and cheese.
