Apple Cranberry Crumble (5 PTS)

3 cups rome apples ( about 4 large) -- chopped
2 cups fresh cranberries
cooking spray
1/2 cup granulated sugar
1/3 cup flour
1/4 cup brown sugar -- firmly packed
3 tablespoons reduced cal stick margerine -- softened
1 cup regular oats
1/4 cup pecans
2 cups vanilla fat free frozen yogurt

1) preheat 375º 2) Layer apples and cranberries in and 8 inch square baking dish soated with cooking spray. Sprinkle with granulated sugar 3) Combine flour and brown sugar, cut in margarine intil it resembles coarse meal. Stir in oats and pecans. Sprinkle over fruit. 4) Bake for 25 mins or until bubbly. Let stand 5 mins.
To serve top with 1/4 c frozen yogurt.

Apple Cobbler (2 Pts)

2 Slices Whole Wheat Bread
1/3 cup Nonfat Milk Powder
1/3 cup Water
2 tsp Splenda
1 tsp Vanilla
1/4 tsp Gr. Cinnamon
2 sm. to med. Apples
2 tsp Brown Sugar Firmly Packed
1. In blender container, combine all ingredients except apples and sugar; process until well blended. In each of four 10-ounce custard cups, arrange 1/4 of the apple slices; top each with 1/4 of the bread mixture, then sprinkle each with 1/2 teaspoon sugar. Microwave on High (100% power)4 1/2-5 minutes or until hot and sugar is bubbly.

Basic Cooking

Cheese Grits
1  cup grits, uncooked
4  cups water
1  tblsp salt
1  stick margerine
8  oz. garlic cheese
8  oz. sharp cheddar
2  tblsp Worcestershire sauce

        Cook grits in salted water. When done add margerine,garlic cheese, cheddar cheese,and Worchestershire sauce. Stir until margerine and cheese have melted. Spray a non-stick casserole dish with butter spray and put mixture in. Optional: sprinkle with parsley flakes or paprika. Bake in oven preheated to 330 deg. for 20 min.
Chalupas
4 Tortilla cups
1  cup refried beans
1  can tomatoes
1  cup grated taco cheese
1  medium onion chopped
   salsa

    Layer beans, onion, tomato in each Tortilla cup and top with cheese.  Heat in 300 deg. oven until warmed thoroughly. Top with salsa and serve hot.

Coffee Cake
2 pks. yeast dissolved in 1/2 cup lukewarm water
1 egg
3/4 cup sugar
1 cup milk
1/2 stick margerine softened
2 cups approx. self-rising flour

Topping
1/2 stick margerine
1 cup brown sugar
Mix together egg,yeast water, milk, softened marg. sugar. Add flour until you have a med. stiff dough. Pour into buttered pan. Mix 1/2 stick Margerine and 1 cup brown sugar together Crumble onto top of cake and let rise 1 hr. or until doubled in size. Bake at 350 degrees until brown on top and toothpick comes out clean.   Approx. 20 to 30 min.

Easy One Pan Cobbler
1/2 cup sugar
1 cup self-rising flour
3/4 cup milk
1-16oz can peaches
1/4 cup sugar
1 stick butter
Preheat oven to 350 degrees.Melt butter in 9 by 13 in. pan while oven is preheating.Mix all ingredients except peaches and 1/4 cup sugar. Pour batter over melted butter but don't stir.Add peaches and sprinkle with 1/4 cup sugar. Bake 30 to 35 minutes.
